1 orange (or lemon), grated rind and juice (grate rind first,
THEN juice it!)
1 cup uncooked bulgur*
1 can black beans, drained and rinsed thoroughly (15-16 oz
can)
1 red bell pepper, chopped in small pieces
6 stalks green onions, chopped in small pieces (green & white
parts)
4 tablespoons fresh parsley, chopped
2 teaspoons vinegar
2 tablespoons canola or olive oil
½ teaspoon ground cumin

vegetable stock
100g bulgur wheat
1 medium courgette, approx 150g, trimmed
125g closed cup mushrooms, trimmed

50g light soft cheese with garlic and herbs
